Hearty & Nutritious Gluten-Free Beef Stew (Pressure Cooker Recipe)

Looking for a comforting, wholesome meal that's both easy to prepare and incredibly delicious? This gluten-free beef stew is one of my favorite go-to meals and is packed with nutrients, protein, and deep, rich flavors, making it perfect for cozy nights and meal prep alike. Using a pressure cooker like the Ninja Foodi or Instant Pot, you can create a tender, mouthwatering stew in a fraction of the time it would take on the stovetop.





Ingredients:

  • 3 lbs cubed grass-fed stew meat, seasoned with salt, pepper, and paprika

  • 1/2 onion, diced

  • 1 head of garlic, minced or whole cloves

  • 4 potatoes (mix of gold and russet), diced

  • 3 large carrots, sliced

  • 4 stalks of celery, chopped

  • 3 cups Kettle & Fire beef bone broth

  • 3 Tablespoons apple cider vinegar

  • 2 bay leaves



Instructions:

  1. Sauté & Brown the Meat:

    • Set your pressure cooker to Sauté mode. Add a small amount of oil and brown the seasoned stew meat on all sides. This step enhances the stew’s depth of flavor.

  2. Add Ingredients:

    • Pour in the beef bone broth and apple cider vinegar.

    • Add the bay leaves, garlic, potatoes, carrots, and celery. Stir to combine.

  3. Pressure Cook:

    • Secure the lid, ensuring the nozzle is set to Seal.

    • Set the pressure cooker to High Pressure for 30 minutes.

  4. Natural & Quick Release:

    • Allow a 5-minute natural release before carefully using a quick release to release the remaining pressure.

  5. Serve & Enjoy:

    • Remove the bay leaves, give the stew a good stir, and adjust seasoning if necessary.

    • Serve fresh and enjoy the tender beef, hearty vegetables, and rich broth.

    • This stew tastes even better as leftovers as the flavors deepen over time!
